Got a glut of tomatoes? This relish recipe is easy and you don't need to go to the hassle of removing the skins. It all gets cooked in one pot and the result is a tasty relish that goes with just about anything!
Ingredients
- 2.5 - 3 kg Tomatoes
- 900 gm Sugar
- 2 Apples or 2-3 Kiwifruit
- 4 Onions
- 7 Chillies
- 1 Tablespoon Salt
- 2 Tablespoon Cornflour
- 1 Large Teaspoon Curry Powder
- Sprinkle Cayenne Pepper
- 1 Large Teaspoon Mustard Powder
- 600 ml Malt Vinegar
Method
- Quarter tomatoes removing tough stem area. No need to remove skins.
- Dice apples and/or kiwifruit along with onions.
- Add first six ingredients to big pot and boil for two hours.
- Then add last five ingredients and simmer for another 15 minutes.
- If you wish for a smoother consistency, blitz with a stick blender.
- Bottle into jars (old jam or gherkin jars work well). Ensure that they are clean and have been sterilised in oven for at least 30 mins. Boil lids.
- Makes approximately 5-6 jam jars worth.
