This delicious cocktail is a modern twist on two favourites. Combining both a Pina Colada and a sweet Martini. This cocktail went down a treat at The Lost Spring when they celebrated the Mercury Bay Seafood festival and has since become a firm 'iconic' favourite.

Serving Tip

Drizzle the Blue Curacao by pouring it over the back of a teaspoon down the inside of the glass.

Ingredients

  • 60 ml rum (Bacardi)
  • 60 ml pineapple juice
  • 30 ml coconut cream
  • 15 ml Blue Curacao
  • 1 cherry
  • 1 orange slice
  • 1 handful of ice

Method

  1. Get a martini glass, cocktail shaker and strainer.
  2. In an ice filled cocktail shaker combine rum, pineapple juice and coconut cream. Shake well and strain into a martini glass.
  3. Drizzle blue curacao down the side of the glass and garnish with cherry and slice of orange.
